Justin Timberlake Concert

My little sisters & I went to the Justin Timberlake concert in Memphis last night!!

I bought our tickets the day they went on sale way back in May, so we have basically waited ALL YEAR for this night & it was TOTALLY worth it!!

We took LOTS of selfies before the show!! Ha!

It's funny, the big news today was that "selfie" is the word of the year.

Justin Timberlake is from Memphis, so of course concert day was dubbed

One BIG highlight of the trip was running in to our favorite, former football player, DJ Williams on Beale Street!

He took my phone after we took this pic & text the picture to a number he says was his mamma's. Lucky for him, I saved the number in my phone. He or she may or may not get calls/texts from me in the future...

Time for the show!!!

Well, actually, we got to the show at 8 {when it was supposed to start) & Justin didn't come out until like 9:15. He didn't have any opening acts,
 just a dj getting the crowd "turned up".

The concert was nothing short of amazing!! Justin performed for THREE HOURS!!! It was the most fun, most awesome three hours ever!! He opened the show with "Pusher Girl" & closed with "Mirrors". He sang just about every hit from all of his solo albums. He also did part of "Holy Grail", everyone thought Jay Z was going to come out, but he didn't of course. He also sang Elvis' "Heartbreak Hotel" which was awesome! We danced & danced the entire time; & moaned & groaned because we were so sore today! Ha!

That's enough...the hotness is overwhelming.

We had so, so, so much fun at this concert! I'm really not a big concert goer, but I would DEFINITELY pay to see Justin Timberlake again & again!!

Midweek Randoms

I posted a semi-how to recipe last night! It was so yummy, you  must try it!

 My little Sawyer man has eczema :(

 It's on the back of his arms & both of his thighs. It doesn't seem to bother him or itch him unless he gets too hot. I've just been putting Auqaphor on it each night...not sure what else to do. Any tips/suggestions would be WONDERFUL! I'll talk to his pediatrician about it next week at his 2 year check-up.

That's right.

This handsome fella' will be TWO next week!!!!!!!!!!!!!

How that is even possible, I'll never know, but here is a lil' sneak peak of his mini birthday photo shoot for his party invites. Some of you reading this should have a little something in your mailbox today...

We had my co-workers/best friends over for dinner & wine Sunday night.

Sawyer & Sam get to be honorary VAD coordinators because of this crazy profession their mothers chose ;) This is the best {forced} picture we could get!

It's been a rough few weeks in the land of VAD Coordinating to say the least. This week has been especially tough, as one of our long time & most favorite patients is not doing well. Say a prayer for us today if you're reading this as well as this patients family.  

 My 6 day vacation officially starts at 5pm today! Tonight we are going to Holiday House. Next week, I'll be putting the finishing touches on the 2nd birthday circus & {breaking tradition} making it look a lot like Christmas around here!!

Slow Cooker Pot Roast

Tonight, we came home from work to an already cooked supper thanks to the good ol' crock pot! I rarely ever cook a real, hearty dish any more! I needed a yummy meat & potatoes meal so I picked up just that when I went grocery shopping over the weekend.

With the cold weather moving in today,

this was the perfect comfort food to come home to!

And since I have a hard time functioning in the morning, I did most of the prep work on Monday night!

I first cut up a yellow onion in to chunks and browned them in a HOT, HOT skillet of olive oil & butter mixed. I didn't cook them or sauté them, just got the edges nice and crispy then threw them in the crock pot.

 While my pan was reheating, I generously salted & peppered my 2 lb chuck roast.

{Our blood pressure is fine everyone! It's kosher salt & there has to be enough to flavor the whole meat & potatoes!!} Ha!

 Then, seared all sides of the roast for about 1 minute each in the HOT, HOT skillet! Again, not cooking the meat, just getting the edges nice & brown. Once done, I put the meat in the crock pot on top of the onions.

 This next part is where I felt really fancy & kind of like a real chef. I deglazed the pan with some red wine vinegar & poured that mixture over the top of my meat in the crock pot. Deglazed; GOOGLE it. It's life-changing.  

 So this is the finished product of my prep work.

Covered it with a lid & put it in the fridge overnight - again, not necessary - but if you hit snooze 6186165168 times in the morning like me, you'll want to do prep work the night before.

 With NO help from a snugly boy and the 2 boxer girls keeping my feet warm on this cold & blustery morning, I pried myself out of bed a little earlier to chop potatoes! Just washed & quartered up some potatoes, peel on; and tossed them in the crock pot.

 Add a can or so of beef broth, a sprig of fresh rosemary

{just because we had some & I don't know what else to do with it} & BAM!

Cover it & cook on low for 8 hours...

or quicker if you're one of those people that get to stay home for a living.

 Delicious, tender, yummy meat & taters'!

Blake cooked Paula Dean's Corn Casserole as a side.

Halloween 2013

I somehow managed to have ALL of my Halloween decorations out by October 1st so that we could enjoy them all month!

The night before Halloween, Sawyer painted his pumpkin & helped me carve one!

Per tradition, my family came over to eat Nana's famous chili & go trick or treating. Sawyer was dressed as a lion who refused to wear his hood or pose for a decent picture.

Poor guy hated his costume. I let him wear it several times over the last couple of weeks to get used to it, but when I was dressing him on Monday night for Spook City I caught his skin in the zipper {parenting fail} - it was very traumatic to him & when I dressed him on Halloween night he threw a huge fit & kept saying "hurt. hurt" :(

He did surprisingly well going door to door around our neighborhood for trick or treating.

One of our neighbors had a haunted house set up in their garage & he went through it with my mom like a champ! This pic was after he exited the haunted garage; he was asking to go back in.
